Why homemade achar tastes different

Most pickle jars on a shelf are made to last. Ours are made to taste like home.
Small batches, real hands
We prepare achar in small batches, the same way it has been made in Nepali kitchens for generations. Spices are ground fresh, oil is heated to the right point, and every jar is filled by hand. That is slower than a machine line, and it is the whole point.
The sun does the work
After mixing, the achar rests in the sun. This natural curing lets the flavours settle and the oil soak into every piece. Salt, oil, and sunlight do the preserving, as they have for centuries.
What that means for you
Because we make achar in batches, the colour and spice level can vary a little from jar to jar. That is a sign of real, handmade food, not a defect. If a batch is hotter or milder than you expected, tell us. We like hearing how you eat it.
Storing your jar
Keep your jar in a cool, dry place, away from direct sunlight. Always use a clean, dry spoon. A little oil on top of the achar helps it keep. Once opened, treat it like any fresh food and enjoy it within a few months.
